Short Intro

No-Fail Dal Tadka is the kind of comforting Indian dal you can make on any day of the week. Creamy lentils, warm spices, garlic and a sizzling tadka come together to create a simple dish that tastes far more special than the effort it takes.

Perfect with steamed rice, jeera rice or warm roti, this dal is an easy addition to any Indian meal.

What Makes This Dal Tadka Special

There is nothing complicated about a good dal tadka. The secret is in cooking the lentils until they are soft and creamy, then finishing them with a freshly made tadka of ghee, cumin, garlic and chilli.

That final tempering is what gives the dal its rich aroma and unmistakable flavour.

Ingredients

For the Dal

  • 1 cup yellow moong dal or toor dal

  • 3 cups water

  • 1 medium tomato, finely chopped

  • 1 small onion, finely chopped

  • 1–2 green chillies, slit

  • ½ teaspoon turmeric powder

  • Salt, to taste

  • ½ teaspoon red chilli powder

  • ½ teaspoon coriander powder

For the Tadka

  • 1½ tablespoons ghee

  • 1 teaspoon cumin seeds

  • 4–5 garlic cloves, finely chopped

  • 2 dried red chillies

  • ½ teaspoon red chilli flakes

  • A pinch of asafoetida

  • Fresh coriander, chopped

How to Make Dal Tadka

1. Cook the Dal

Wash the lentils thoroughly until the water runs mostly clear. Add the dal, turmeric, salt and water to a pressure cooker or heavy-bottomed pot.

Cook until the lentils are completely soft and easily mashable.

2. Prepare the Dal Base

Once cooked, gently whisk the dal until smooth and creamy.

Add the chopped tomato, onion, green chilli, red chilli powder and coriander powder. Simmer everything together for a few minutes until the flavours come together.

Add a little water if the dal feels too thick.

3. Make the Tadka

Heat ghee in a small pan over medium heat.

Add cumin seeds and let them sizzle. Add the chopped garlic and cook until lightly golden.

Add dried red chillies, chilli flakes and a small pinch of asafoetida. Let everything become fragrant, but avoid burning the garlic.

4. Finish the Dal

Immediately pour the hot tadka over the cooked dal.

Give it one gentle stir, keeping a little of the tempering visible on top.

Finish with freshly chopped coriander.

How to Serve

Serve the dal hot with:

  • Steamed basmati rice

  • Jeera rice

  • Plain roti

  • Tandoori roti

  • Naan

  • Papad and pickle

  • A simple cucumber salad

A small spoonful of ghee on top just before serving makes it even more comforting.

Tips for the Perfect Dal Tadka

Don’t rush the lentils.
The dal should be properly cooked and soft before you start building the final flavour.

Adjust the consistency.
Dal thickens as it sits, so keep it slightly looser if you are serving it later.

Don’t burn the garlic.
Lightly golden garlic gives the best flavour. Burnt garlic can make the tadka bitter.

Make the tadka fresh.
The aroma of freshly fried cumin, garlic and chilli is what gives dal tadka its signature character.

Taste before serving.
Adjust salt, chilli and water at the very end according to your preference.

Storage & Reheating

Leftover dal can be stored in an airtight container in the refrigerator for up to 3 days.

When reheating, add a splash of water and warm the dal gently over low to medium heat. Adjust the seasoning if needed.

For the best flavour, prepare a small fresh tadka before serving leftovers.

Frequently Asked Questions

Can I use moong dal instead of toor dal?

Yes. Moong dal works very well and gives the dish a lighter, smoother texture.

Can I make Dal Tadka without ghee?

Absolutely. You can use vegetable oil or another cooking oil. Ghee gives the tadka a richer and more traditional flavour.

Why is my dal too thick?

Dal naturally thickens as it cools. Simply add a little warm water and mix until you reach your preferred consistency.

Can I make this dal without a pressure cooker?

Yes. Cook the lentils in a regular pot until completely soft. It may take a little longer, but the result will still be delicious.

How can I make the dal more spicy?

Add an extra green chilli, dried red chilli or increase the amount of chilli flakes in the tadka.
